Okay, craving a Buffalo Chicken something, I just didn't know what UNTIL I made this bad boy. Alternative buffalo sauce for a cleaner option and a homemade herby yogurt dill dressing is all you need to feel satisfied.
What you'll need:
wild rice of any brand
organic chicken breast
Buffalo Sauce - if you like Frank's Buffalo Sauce, I highly recommend Primal Kitchen's Buffalo Sauce as a cleaner alternative
Pre-cut cauliflower (to save ya some time)
Green cabbage
Whole carrots (we'll julienne them for a fresher taste)
Celery
Homemade herby yogurt dressing (greek yogurt, dill, lemon)
How to do it:
Preheat oven to 375 degrees
Cook wild rice per instructions on the bag
Rinse the chicken breasts, pat dry, and lather with olive oil, salt & pepper; place on a baking sheet. Add the pre-cut cauliflower to the same baking sheet and lather with olive oil, sale & pepper (the cauliflower will absorb some of the chicken juices to add an extra layer of flavor)
Bake the chicken and the cauliflower for 30 minutes at 375 degrees
Prep the remaining ingredients: slice the celery, cabbage and carrots; set aside. (Hack: If you don't have a mandoline, I bought a cheap one on Amazon and use it for everyyyything!)
When the chicken and cauliflower are finished baking - pull the chicken off the pan and slice into cubes; toss the chicken in your buffalo sauce of choice
Assemble the bowl: wild rice, buffalo chicken, celery, carrots, cabbage, drizzle dressing
Here's the Herby Yogurt Dressing:
3 tbsp Greek yogurt
1 tbsp freshly chopped dill
A squeeze of half of a lemon
1 tbsp olive oil
Salt and pepper to taste
