Grass-Fed Beef Burger Bowl

Slight obsession with burgers but can't keep eating the bun (whether it's gluten-free not - I don't waaant it! This burger bowl hits all the cravings without the guilt.


What you'll need:

  • lettuce (I used arugula)

  • grass-fed beef burger (Thousand Hills is where it's attt)

  • sweet potatoes to roast

  • zucchini

  • bell pepper 

  • sliced tomato & onion (I used white onion)

  • avocado 


How to make it:

  • Preheat oven to 400 degrees

  • Slice the sweet potatoes into slivers/fries; place on a baking sheet and lather with olive oil and salt and pepper; cook at 400 degrees for 25 minutes 

  • Prep burger patties (the fewer ingredients the better): place beef in a large bowl, add salt and pepper to your liking, one egg, and minced garlic; form burger patties (for extra yumminess - add some gluten-free Panko bread crumbs)

  • Heat olive oil in cast iron on medium heat; cook patties for about 4-5 minutes on each side (flipping only once)

  • While burgers are cooking, slice the zucchini in slivers (the same way as the sweet potatoes); set aside

  • Prep the remaining ingredients while you are finishing the burgers: slice the bell peppers, slice the tomatoes and white onion and avocado

  • Once the burgers are finished, set aside and use the same pan to sear the zucchini (should only take about 5 minutes); add olive oil to the pan, place zucchini on one side and season with salt and pepper; cook until slightly browned (zucchini doesn’t take long at all to cook)

  • Assemble to the bowl: lettuce, burger patties, bell peppers, tomatoes, onions, avocado, zucchini and sweet potatoes

  • Squeeze lemon on top to finish
