Slight obsession with burgers but can't keep eating the bun (whether it's gluten-free not - I don't waaant it! This burger bowl hits all the cravings without the guilt.
What you'll need:
lettuce (I used arugula)
grass-fed beef burger (Thousand Hills is where it's attt)
sweet potatoes to roast
zucchini
bell pepper
sliced tomato & onion (I used white onion)
avocado
How to make it:
Preheat oven to 400 degrees
Slice the sweet potatoes into slivers/fries; place on a baking sheet and lather with olive oil and salt and pepper; cook at 400 degrees for 25 minutes
Prep burger patties (the fewer ingredients the better): place beef in a large bowl, add salt and pepper to your liking, one egg, and minced garlic; form burger patties (for extra yumminess - add some gluten-free Panko bread crumbs)
Heat olive oil in cast iron on medium heat; cook patties for about 4-5 minutes on each side (flipping only once)
While burgers are cooking, slice the zucchini in slivers (the same way as the sweet potatoes); set aside
Prep the remaining ingredients while you are finishing the burgers: slice the bell peppers, slice the tomatoes and white onion and avocado
Once the burgers are finished, set aside and use the same pan to sear the zucchini (should only take about 5 minutes); add olive oil to the pan, place zucchini on one side and season with salt and pepper; cook until slightly browned (zucchini doesn’t take long at all to cook)
Assemble to the bowl: lettuce, burger patties, bell peppers, tomatoes, onions, avocado, zucchini and sweet potatoes
Squeeze lemon on top to finish
