The Fluffiest Protein Pancakes

No bananas, no refined sugar, no flour! Starting at 9 grams of protein per pancake to kick start your slow Sunday morning. Let's GET IT!



What you'll need:

  • 1.5 cup rolled oats

  • 2.5 tsp baking powder

  • 1 scoop protein powder - suggest whey protein; BUT I actually used pea protein powder, because that's what I had on hand. With the pea protein powder, you'll just need to add a little extra water (tablespoon or so) to break up the thickness

  • 3 Eggs

  • 1/3 cup Greek yogurt

  • 1 tbsp maple syrup

  • 2 tbsp coconut oil; melted & room temp

  • 1/2 tsp cinnamon

  • Dash of vanilla


Let's make it!

  • Blend the oats in a blender until they are powdered

  • Add the protein powder, eggs, greek yogurt, maple syrup, coconut oil, cinnamon and vanilla to the blender and blend until mixed well into a batter

  • Cook your pancakes! I use a cast iron skillet, didn't need any additional olive oil or butter on the pan - they flip easily.


The batter makes a good amount of pancakes, depending on the size you make them. I make about three at a time and refrigerate the remaining and use throughout the week. I hope you are able to enjoy these babies on a slow weekend morning with a hot cup of coffee.
