All the goodness with half the sugar, you're welcome.

I always crave banana bread when the weather starts to cool down but I just can't stand how much sugar is in it! So here's a recipe with half the sugar but still all the goodness.
You'll need:
3 ripe bananas - mashed with a fork
1 stick of unsalted butter - melted and then cooled to room temp
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cup all purpose flour; sifted
1 teaspoon baking soda
pinch of salt
1 cup (plus some) dairy free, no added sugar, semi-sweet choc chips (I used CHUNKS)
Let's bake!
Preheat oven 350 degrees. This is the first thing that I do before I pull the ingredients out. By the time you're done making the batter, the oven will be preheated
Mix wet ingredients: bananas, butter, egg, vanilla
Add the brown sugar to the wet ingredients; mix well
In a separate bowl, mix dry ingredients: flour, baking soda, salt
Mix wet & dry ingredients (the batter will be thick)
Fold in chocolate chunks; save a few for the top
Line a loaf pan with parchment paper and pour in your mixture. Add chocolate chips to the top (get crazy and add some nuts or coconut flakes!)
Bake for 70 minutes
Let it cool slightly before you dig in -- you better add a slice of butter and watch it melt
Enjoy! xoxo
