Simple Mango Salsa

Salsa, salad, or even a side... just a few ingredients are all it takes for one of the best-tasting snacks. This mango salsa is best to make a few hours or even a full day ahead to allow all the flavors to mix together.

What you'll need:

  • fresh mangoes

  • limes

  • cherry/grape tomatoes

  • cilantro

  • red onion

  • jalapeño

  • extra virgin olive oil

  • honey


Now prep and mix it all together:

  • I'm lucky enough to have a mango tree in the backyard - but when shopping for your mangoes, try to make sure they are red and yellow in appearance and somewhat soft to squeeze

  • Slice and dice the mangoes

  • Halve the tomatoes

  • Cut the red onion as small as you can (or omit it altogether if you prefer to not have onions)

  • I use a full jalapeño with the seeds because I love the bite from the spice

  • Gently cut cilantro (stems too!)

  • Drizzle olive oil, a little honey, juice from a full lime, salt and pepper to taste


Enjoy with blue corn chips (or my favorite - plantain chips)!
